I am thinking of Ireland this weekend. I have been to Dublin and spent a night there while transferring flights. Actually I bought a vegetarian cookbook there right in the centre. It was Christmas time and we all enjoyed our time there. And of course, today it is Saint Patrick’s Day. A dear person, my friend was called Patricia and she identified with this day. So I remember her too.
Yesterday I made Colcannon and today continuing with the cabbage theme, I made Cabbage Galette. It is a cross between Irish and Indian cuisine – so I called it Indrish Cabbage Galette.
