Rhubarb, Ginger and Almond Tart

Rhubarb, Ginger and A,mond Tart kuva I associate rhubarb with my sister, my childhood and spring. My sister used to give me rhubarb from her garden. The plate is an actual one we had in my childhood home.  Rhubarb leaves are included in children’s songs and stories as lovely homes for small animals. And who doesn’t remember eating the sticks freshly picked!

This tart has no eggs. I used corn flour, so the recipe should go for more restricted diets as well. It is more wet than dry in consistency. I served it with whipped cream when it was still a bit warm. Hope you too will enjoy it. It is nicely balanced in flavour. All three star in it. ‘
