Apricots are just lovely when you pick them fresh and ripe from the tree. I have had this luck in my life. Now I buy them from the shops. Still they are good. And every time they bring back those lovely memories of sun, color and scent.
I combined here coconuts with apricot as they are a natural pair both growing in warm climates. Oats I chose because they make a lovely texture and smell possible. You can just imagine – as the tea cake is getting done – the perfume of the oats floating and surrounding one. Nicee.
Now there was only one problem. What to put on top? I solved my problem with raspberry jam. How are you going to solve yours?
