Historically Finland had to depend on the ingredients that were available at Christmas time. So – potatoes, carrots, swedes, and beetroot ruled together with ham! Potatoes were and are still made into bakes and beetroot joined apples, onions, potatoes, carrots and pickled cucumber to make the Christmas salad. Ham was dressed typically with cloves and mustard. Rice porridge and dried fruit soup was enjoyed as a dessert. Butter, milk and cream were lavished on most things. Vegan things were not even dreamed of.
