May is a month that includes many celebrations in Finland. We have May Day with doughnuts, Mother’s Day with special breakfasts, cakes and roses (tomorrow) and end-of-school parties for years 9 and 12. Actually this year the last day of school will be 1 st of June. In the end of June Finns celebrate Mid-Summer and that is major! All these recipes are vegetarian and are especially good for those who love goat cheese, cashews and beetroot.
