Seriously Happy Pumpkin Seed Cutlets  Pumpkin Seed and Apricot Waffles

 

  1. Pumpkin Seed Salad – brown rice,  fried onions+capsicum+garlic+ginger, cherry/plum tomatoes, avocado, salt, pepper, curry, chili, turmeric, coriander (just the dry flakes this time) and, of course soaked pumpkin seeds (2-3 hrs in the fridge) all worked pretty well in that order! Nice and light! Yet enough!
  2. Pumpkin Seed Soup – onion, garlic, oil, new potatoes, mini capsicums, water, salt, pepper, milk, pumpkin seeds, cream cheese and dill fried and cooked in that order and then whizzed! And Eaten! Yam…
  3. Pumpkin Seed Cutlets –  ground pumpkin seeds, bread crumbs, corn flour, salt, pepper, curry powder, sweet paprika, coriander, grated onion and garlic, grated Cheddar cheese, tomato passata, tomato paste, ketchup, eggs + oil all mixed, shaped and fried in oil! Served with tomato and onion gravy and maybe smashed potatoes. Did some small balls as well. So filling! So good!
  4. Pumpkin Seed Waffles – eggs, milk, flour, roughly crushed pumpkin seeds, chopped apricots, oats, sugar, salt and oil all mixed and then left for half an hour before baking in a waffle iron and subsequently devoured with raspberry jam!
